Our 90 Minute Double Pale Ale was and is so popular that we came up a version that employeed
the use of two of the most popular hops in the marketplace at this time - Amarillo & Simcoe.
The Gemini makes use of generous quantities of hops to create a complex beer with intense flavors and aromatics without becoming overly bitter or harsh. Use of only two hop varieties throughout the boil showcases the distinct qualities of both hops and allows a small amount of malt sweetness to show through. Caution: Extremely vigorous fermentation.
Straining, use of large fermenter (at least 7.8 gallons), use of blow-off method and bagged fermenter are highly encouraged unless you use Fermcap S to eliminate the fermentation cap formation. |
