Scotland is known primarily for its whisky, but its lesser-known hearty beers vie for the limelight. Scottish Export Ale is the Scottish equivalent of the English Bitters, but light amber in color, maltier, and softer and chewier with a slight smoky character. It’s clean, with greater richness and less emphatic fruitiness than most ales. This is due in part to a cooler fermentation, preferably in the mid to high sixties, and a lower hopping rate. It has a low carbonation level which contributes to its heavy mouth feel.
