Amylase Enzyme

This enzyme breaks down the starch components of malt, barley, and adjuncts into soluble dextrins and small quantities of maltose and glucose. It demonstrates excellent thermal stability which minimizes the possibility of poor wort filtration characteristics, low extract yield or cloudy wort.

USE: Add 1 tsp. per 5-gallon batch to the mash @ 140 degrees or after the addition of the yeast to the wort. It may be added to any batch of beer that has an unreasonably high terminal gravity.

Corn Sugar (dextrose)

Corn sugar may be used in beer making to increase the alcohol content of the beer; however, we do not recommended its use for this purpose because it will impart a cidery, winey, sour taste to the beer if used in amounts greater than 20%. The main use of corn sugar is for priming bottles and kegs.

 Fermcap S

Used by the microbrewery industry to prevent foam formations in the brew kettle and prevents fermentation cap formations in the fermenter.

USE: Add 1/4 teaspoon to the brew kettle to prevent boil a over.

Licorice Sticks

Increases head retention while imparting slight flavor.

USE: In making stouts, add 1/3 of a stick (about 1 inch) to the wort in the boiling process.

Try placing the licorise in a plastic bag. Using a hammer to impact it, breaking it into smaller, easier to dissolve pieces.

Water Crystals

Yeast Starter

This is an approximate 4 oz package of light Dried Malt Extract (DME). It should be dissolved in 2 pints of water, which is then pasteurized by heat and allowed to cool to normal pitching temperatures 70º to 75º before adding the activated yeast pouch or the yeast tube. An Erlenmeyer flask make excellent starter bottles. The resulting starter could have a yeast cell population in 1/4 BILLION count range. Pitching an active yeast starter should reduce the lag time on a fresh yeast to a very hours while renewing an older yeast to activation to 8 - 12 hours.
