Belgian Candi Sugar

This imported Belgian sugar is made from sugar beets and is used by professional brewers to produce some of the unique beers styles indigenous to Belgium to enhance flavor, while adding alcohol. The diamonds are formed by the slow crystallization of a highly concentrated sucrose syrup. The degree of color results from natural caramelization during the heating process. No additional coloring of flavoring agents have been added.

This sugar comes in "Clear, Amber, and Dark" forms. It is not processed in any way, but is raw, unfiltered, and 100% fermentable.

After Bitter Orange and Coriander seeds, Candi Sugar is the most used of the "exotic" ingredients. It allows you to add color without malt taste. It allows you to raise alcohol levels without affecting thickness. It can allow you to add a "molasses" or "sweet" taste to your drink in small increments without caremalizing your malts. It is one of the most versatile brewing ingredients on the market.
