Brewed mainly in eastern Canada, especially in Quebec, Canadian Ale exhibits a rich golden hue. It is lightly hopped, creating a very gentle character that doesn’t mask the malty sweetness. This recipe produces a much more traditional and flavorful beer than Canadian exports. It is light in flavor and light to medium-bodied in character. Remaining faithful to the style, it is highly carbonated with low to medium head retention. One should be able to sense a slightly floral aroma, accompanied by a hint of malt.
