American Crystal Malt 80L
a.k.a. Carmel Malt
78° - 84° lovibond, Briess Malting
Crystal is used to improve body and aid head retention, while creating a
malty sweet background. Used by all-grain and extract brewers alike because it does not
require mashing. No enzyme activity is present. The remaining list of malts are crystal
malts.
For red beer, use 3 - 12% to provide color, sweetness, caramel flavor and body.
For dark beer, use 7 - 15%.
For Porter and Stout, use 10 - 15%.
