Lalvin D-47
Good for traditional meads. Intolerant of low nutrient environments, especially nitrogen. Needs long aging, may taste medicinal if served too young. Alcohol tolerance: 12-14%.
Lalvin RC-212
Burgundy yeast that enhances fruity flavors, making it good for melomels with darker fruits & berries. Alcohol tolerance: 14-16%
   
Red Star Cotes du Blancs
Notoriously slow fermenter with high nutritional requirements, especially nitrogen. Highlights fruit aromas, making this a very good strain for use with single-varietal honeys. Alcohol tolerance: 12-15%
Lalvin K1V-1116
The original “killer strain,” popular amongst fresh fruit winemakers due to its strong competitive factor. Quickly crowds out other microorganisms, reducing the chance for infectious bacteria to establish a foothold. Retains fruity character longer than many other strains. High nitrogen requirements. Alcohol tolerance: 16-18%
   
Lalvin 71B-1122
Excellent yeast for melomels using dark fruit & berries. Greatly enhances fruitiness & matures quickly. Has a unique characteristic of being able to metabolize a portion of malic acid to ethanol, giving a softer, more rounded profile with less aging. Jason’s favorite all purpose mead yeast. Alcohol tolerance: 15%
Lalvin EC-1118
Strong, fast fermenter with a high alcohol tolerance. Finishes very dry. Can be used to kick off a stuck or slow fermentation. Alcohol tolerance: 18%
